SMART® by Oenodia: a new star is born
Oenodia is on a worldwide roadshow to present the new model in its STARS® range: the SMART®, a mobile unit for pH adjustment and eco-selective tartaric stabilization. Innovative in its compact size and automated systems, the SMART® meets wine producers’ need for quality, competitiveness and resilience. Facing a combination of crises and uncertainty, they can rely on infallible physical processes that are easy to use, eco-friendly, and respect the wine.
Calcium-tartrate precipitation in a bottle of wine (the natural formation of tartrate crystals), which can occur if the wine’s temperature falls and especially when it is exported, is one of the problems producers face, and is the leading cause of merchandise being rejected for export. To eliminate this risk, an operation is necessary: tartaric stabilization.
There are several tartaric-stabilization methods of varying effectiveness: some involve putting an additive in wine; others use physical processes. Only one technique currently guarantees 100% reliability for all markets: eco-selective stabilization. This involves gently running wine over food-grade membranes that are impermeable to liquid and everything it contains – except to the potassium and calcium tartrate ions that cause crystallization. A weak electric field is passed through the membranes, capturing and extracting the wine’s ions, and preventing the subsequent formation of tartrate crystals in the bottle.
This is the technique used by the SMART® by Oenodia. This latest addition to the STARS range combines eco-selective tartaric/calcium stabilization and pH adjustment – all in a compact, mobile and fully-automated unit with a flowrate range suited to small volumes (500-1,000 l/h) and low electricity consumption.
